Been making myself cold lunch for work since the lunch room/microwave room is under renovation.
This is pretty good -
Penne pasts with homemade pesto & ham/pea/corn/red onions
Homemade pesto (recipe via Goop)
- 3 tbs pine nuts
- 1 clove garlic, finely minced
- 1 cup fresh basil leaves
- 1/3 cup olive oil
- 1/4 cup finely grated parmesan
Pulse pine nuts in a blender or food processor until minced. Add garlic, basil and olive oil and pulse under mixture is nicely pureed. Remove to bowl & stir in parmesan cheese. Add sale & pepper to taste.
Mine is especially chunky due to inadequate large blender for such small job here…
Then just combine your own ratio of pasta, meat, vege and pesto. I also added a dash of olive oil, dried oregano and fresh basil leaves on top!
